Recently, I’ve been craving cookies. Lots of cookies. Chocolate cookies. Almond cookies. Crunchy. Soft. The sort that melt in your mouth; the ones that are slightly chewy. Actually making them hasn’t been happening, so the recipe for these bars thrilled me. Wicked simple– I just needed 10 minutes and to dust off a loaf pan. The variations are infinite, as you can vary the nuts and sweetener. Hazelnuts, anyone?

They are chock full of fiber, calories from good fats, and quite filling. While there is some sugar from the jam, it’s not too much. I’d slice them small, unless you are planning to use them for meal replacement bars.

Chocolate Black Currant Nut Bars

3/4 c ground almonds
1/2 c ground chia seeds
1/4 c ground flaxseeds
1/4 c cocoa powder
1/4 c coconut oil, melted
1/4 c sunflower seed butter
3 T black currant jam (I buy a lower sugar European brand from a Russian grocery)

Mix together, and press into a loaf pan. Chill for at least 60 minutes. Slice, and enjoy. Makes 12 snack size, or 8 full size.
