It’s now officially picnic season! Memorial Day through Labor Day, be sure to take advantage of the summer weather and good cheer. Pack up the car, fill up your bike’s panniers, tuck away a Tupperware or two in your day pack, and head out into nature for your next meal. Or even just the back porch.

Here’s a recap of some picnic-friendly recipes:

Main Dishes
Simple Collard Summer Rolls
Spring Rolls with Peanut Sauce
Salmon Artichoke Patties
Broccoli Fritatta
Kayak Pasta Salad for One
Quick Quinoa Kale Salad

Carrot, Chickpea, and Parsley Salad

Sides & Salads
Cornbread
Fresh and Easy Slaw
Moroccan Cauliflower Salad
Roasted Cauliflower with Lemon and Mustard
Artichoke White Bean Spread

Sweets
Carrot Cake Mini-muffins
Chocolate Nut Bars
Peanut Maple Mini-Bars
Chocolate Chip Scones

Don’t forget the lemonade, watermelon, berries, lemonade, pickles, and carrot sticks! And, of course, keep in mind the warmer outdoor temperatures increase the risk of foodborne illnesses. When holding for longer than two hours (cooler temperatures), one hour (hot hot weather), or in doubt, pack it with ice or cold packs. Wash hands, if possible, or use hand sanitizer (way less effective unless your hands were clean to start with).

P.S. I like sunscreen and/or a hat too. Really helpful.
