To build upon a theme, these flakes have a nutty sweetness to them that complemements fruit exceptionally well. As shown, I truly enjoyed them mixed into a bowl of sweet strawberries.
Cashew Millet Flakes
Thinner is better! Otherwise, you will definitely think you are eating grape-nuts.
1/3 c millet flour
1/4 c brown rice flour
1 T ground golden flax seeds
3 T ground cashews
2 T brown sugar
3/4 c water
Pinch salt
Preheat oven to 350 F. Line a cookie sheet with parchment paper. Mix together all the ingredients, and pour the batter evenly over the parchement paper. Smooth it into as even a layer as possible. Bake, for 20 minutes or until beginning to brown, then remove from the parchment paper and break into peices. Bake for another 5 to 10 minutes, or until many pieces are browned. Cool, and store in an airtight container.
Hmm, I have often thought about making my own because of the strange ingredients in the store brand but I always thought it was too difficult. This looks easy enough.
